Beef Taco Soup

A hearty and flavorful Beef Taco Soup perfect for cozy nights.

  • 1 lb Ground Beef
  • 1 can Black Beans
  • 1 can Kidney Beans
  • 1 cup Corn
  • 2 cans Diced Tomatoes
  • 1 Onion, diced
  • 2 cloves Garlic, minced
  • 2 tbsp Taco Seasoning
  • 4 cups Low-Sodium Beef Broth
  • Olive Oil, for cooking

Instructions

  1. Heat a large pot or Dutch oven over medium-high heat. Add a splash of olive oil.
  2. Crumble your ground beef into the pot. Season with a pinch of salt and pepper.
  3. Brown the beef for about 5-7 minutes, breaking it apart until no longer pink.
  4. Toss in diced onion and minced garlic. Sauté for 3-4 minutes until the onion is translucent.
  5. Pour in the beans, corn, and diced tomatoes, then mix it all up!
  6. Sprinkle in taco seasoning. Stir to coat everything evenly.
  7. Pour in the broth, stirring to combine. Bring to a gentle boil.
  8. Let it simmer for about 15 minutes to enhance the flavors.
  9. Taste once more to adjust flavors and add lime juice if desired.
  10. Ladle into bowls and add toppings like cheese, avocado, and sour cream.

This soup can be made vegetarian by substituting ground beef with plant-based meat or beans.
