Hearty and Flavorful Beef Vegetable Soup

A warm bowl of Beef Vegetable Soup that combines hearty ingredients and delightful flavors, perfect for chilly nights.

  • 2 lbs beef chuck roast or stew meat
  • 4 medium Yukon Gold or Russet potatoes, diced
  • 3 medium carrots, chopped
  • 1 cup frozen peas
  • 1 can (14.5 oz) diced tomatoes
  • 1 large onion, diced
  • 3 cloves garlic, minced
  • 6 cups beef broth
  • 2 tablespoons olive oil
  • Salt and pepper to taste
  • Optional: dried herbs (thyme, bay leaves)
  • Optional: Worcestershire sauce or hot sauce to taste

Instructions

  1. Prepare the beef by cutting it into bite-sized cubes and season with salt and pepper.
  2. Heat olive oil in a large pot over medium-high heat. Sear the beef in batches until browned.
  3. Add diced onions and minced garlic to the pot, sautéing until they are translucent and fragrant.
  4. Reintroduce the browned beef to the pot and add diced tomatoes with their juices, stirring to combine.
  5. Pour in beef broth, bring to a gentle boil, then reduce to a simmer.
  6. Stir in chopped potatoes and carrots, allowing to simmer until they start to soften.
  7. Add in frozen peas and cook for an additional 5 minutes.
  8. Taste and adjust seasoning with Worcestershire sauce or hot sauce if desired.
  9. Remove from heat and fish out bay leaves if used before serving.

Notes

This soup is freezer-friendly, store in an airtight container for up to 3 months. Can be made vegan by substituting lentils for beef.
