Homemade Beet Juice

A vibrant and health-packed beet juice that’s refreshing and easy to make. Perfect for boosting energy and adding color to your day!

Ingredients

  • 1 pound beets, washed and trimmed
  • 1 large cucumber (or 34 small cucumbers)
  • 1 large apple (Granny Smith, Fuji, or Gala)
  • 1 bunch flat-leaf parsley
  • 1 lemon or lime
  • 1 1-inch knob of fresh ginger

Instructions

  1. Prepare the beets: Rinse under cold water to remove dirt and cut off the ends.
  2. Juicing time: Feed the beets, cucumber, apple, and ginger into the juicer and juice until smooth.
  3. Add green goodness: Toss in the parsley and give it an additional whirl in the juicer.
  4. Squeeze in lemon or lime juice for brightness, stir, taste, and adjust.
  5. Serve it up: Pour into a glass, add ice if preferred, and enjoy!

Notes

Beet juice can be stored in the fridge for 2-3 days. Shake well before sipping.
