  • 3/4 cup unsweetened cocoa powder
  • 2 cups granulated sugar
  • 1 1/2 teaspoons baking powder
  • 1 1/2 teaspoons baking soda

  • 2 large eggs
  • 1 cup whole milk
  • 1/2 cup vegetable oil
  • 2 teaspoons vanilla extract
  • 1 cup boiling water
  • 8 oz dark chocolate, melted
  • 1 cup unsalted butter, softened (for frosting)
  • 4 cups powdered sugar (for frosting)
  • 2 teaspoons vanilla extract (for frosting)

Instructions

  1. Preheat your oven: Preheat your oven to 350°F (175°C) and line your cupcake tin with liners.
  2. Mix the dry ingredients: In a bowl, whisk together flour, cocoa powder, baking powder, baking soda, and salt.
  3. Combine the wet ingredients: In another bowl, whisk together sugar, eggs, milk, oil, and vanilla until smooth.
  4. Add the dry mixture to the wet: Gradually stir dry mix into the wet ingredients gently.
  5. Fold in the melted chocolate: Carefully add the warm, melted chocolate and mix.
  6. Pour in the boiling water: Slowly stir in the boiling water until combined.
  7. Fill the cupcake liners: Pour batter into each liner, filling about 2/3 full.
  8. Bake: Bake for 18-20 minutes, or until a toothpick inserted comes out clean.
  9. Cool: Allow to cool in the tin for 5 minutes before transferring to a wire rack to cool completely.

Notes

For frosting, mix softened butter with powdered sugar and vanilla until desired consistency is reached. Decorate with chocolate shavings or sprinkles if desired.
