Banana Upside Down Cake

A delicious Banana Upside Down Cake with caramelized bananas, perfect for any occasion.

  • 3 ripe bananas, mashed
  • 2 bananas, sliced
  • 1/2 cup butter, unsalted
  • 1 cup brown sugar
  • 1 cup granulated sugar
  • 2 eggs
  • 1 teaspoon vanilla extract
  • 1 1/2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. Prepare your pan by greasing a 9-inch round cake pan and evenly distributing 1 cup of brown sugar on the bottom.
  3. Slice the 2 remaining bananas and arrange the slices over the brown sugar in the pan.
  4. Mash the 3 ripe bananas in a large mixing bowl until smooth.
  5. Cream together the softened butter, granulated sugar, and mashed bananas until light and fluffy.
  6. Add the eggs one at a time, followed by the vanilla extract.
  7. Mix the dry ingredients (flour, baking powder, baking soda, and salt) in a separate bowl.
  8. Combine the dry ingredients with the banana mixture until just mixed.
  9. Pour the batter over the banana slices in your prepared pan.
  10. Bake for 40-45 minutes or until a toothpick inserted comes out clean.
  11. Cool the cake in the pan for about 10 minutes before flipping it onto a serving plate.
  12. Serve warm or at room temperature, optionally with vanilla ice cream.

Notes

For a vegan version, substitute butter with coconut oil and eggs with flaxseed mixture.
