Instructions

  1. Prep Your Gear: Gather your tools: heavy-bottomed saucepan, wooden spoon, candy thermometer, and a greased 9×9 inch baking pan lined with parchment paper.
  2. Combine the Cream and Butter: Melt heavy cream and unsalted butter over medium heat, then set aside.
  3. Make the Sugar Mixture: Mix granulated sugar, light corn syrup, and salt in another saucepan over medium heat, stirring constantly until melted.
  4. Watch the Color Change: Stop stirring the sugar mixture once it begins to bubble, cooking until it turns golden amber.
  5. Add Cream Mixture Carefully: Remove from heat and gradually stir in the cream mixture, being cautious of bubbling.
  6. Cook to Perfection: Return to medium heat, stirring until the mixture reaches 250°F (firm ball stage).
  7. Flavor It Up: Stir in the vanilla extract before removing from heat.
  8. Pour into the Pan: Pour the caramel mixture into the prepared baking pan and shake gently to even out.
  9. Cut and Wrap: Once cooled and set, cut into squares and wrap in wax paper or store in an airtight container.
