Homemade Orange Juice Cake

A cheerful and zesty orange juice cake that brings back memories of family gatherings and delicious treats.

  • 1 1/2 cups all-purpose flour
  • 1 cup granulated sugar
  • 3 large eggs
  • 1/2 cup unsalted butter, softened
  • 1/2 cup fresh orange juice
  • 1 tablespoon grated orange zest
  • 1 teaspoon vanilla extract
  • 1 1/2 teaspoons baking powder
  • 1/2 teaspoon salt

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Grease a 9-inch round cake pan or a loaf pan with butter and dust lightly with flour.
  3. Whisk together the flour, baking powder, and salt until well combined.
  4. Beat the softened butter and sugar together until fluffy and light in color—about 3-5 minutes.
  5. Add the eggs one at a time, mixing well after each addition. Add in the vanilla extract and grated orange zest, mixing until combined.
  6. Pour in the fresh orange juice, blending until well combined.
  7. Add the dry mixture to the wet ingredients and gently fold until just combined.
  8. Scrape the batter into the prepared pan and smooth the top with a spatula.
  9. Bake for 30-35 minutes, or until a toothpick inserted into the center comes out clean.
  10. Cool the cake in the pan for 10 minutes before transferring it to a wire rack to cool completely.

Notes

For added flavor, serve with a sprinkle of powdered sugar or a drizzle of orange glaze. You can also add cranberries or chocolate chips for variations.
