Irresistibly Soft Pumpkin Cookies with Cream Cheese Frosting

  • 2 1/2 cups (312 g) all-purpose flour
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • 1 tablespoon pumpkin pie spice
  • 1/2 teaspoon salt
  • 3/4 cup (170 g) unsalted butter (room temperature)
  • 3/4 cup (150 g) granulated sugar
  • 1/2 cup (100 g) packed light brown sugar
  • 1 1/4 cups (305 g) canned pumpkin puree
  • 1 large egg (room temperature)
  • 1 teaspoon pure vanilla extract
  • 8 ounces (226 g) cream cheese (softened but still cool)
  • 1/4 cup (56 g) unsalted butter (softened but still cool)
  • 1 teaspoon pure vanilla extract (for frosting)
  • 1 3/4 cups (210 g) confectioners’ sugar (sifted)

Instructions

  1. Preheat your oven to 350°F (175°C). Line two baking sheets with parchment paper.
  2. Mix together the all-purpose flour, baking powder, baking soda, pumpkin pie spice, and salt.
  3. Cream together the unsalted butter, granulated sugar, and brown sugar until fluffy.
  4. Add in the pumpkin puree, egg, and vanilla extract until combined.
  5. Gradually add the dry ingredients to the wet mixture, stirring until just combined.
  6. Scoop heaping tablespoons of dough onto the prepared baking sheets, spacing them about 2 inches apart.
  7. Bake for approximately 12-15 minutes, until edges are set and tops look slightly cracked.
  8. Cool the cookies on the baking sheets for about 5 minutes before transferring them to a wire rack.
  9. Prepare the cream cheese frosting by beating together cream cheese, butter, and vanilla until smooth.
  10. Spread a generous layer of cream cheese frosting on top of each cookie once cooled.
