  • 1/2 cup butter, melted
  • 1/4 cup sugar
  • 1 (8 oz) package cream cheese, softened
  • 1/2 cup sugar
  • 1 teaspoon vanilla extract
  • 1 egg
  • 2 cups fresh strawberries, chopped
  • 2 tablespoons cornstarch

Instructions

  1. Preheat your oven to 325°F (160°C).
  2. Prepare an 8×8-inch baking dish lined with parchment paper.
  3. Make the crust by combining graham cracker crumbs, melted butter, and 1/4 cup sugar until crumbly.
  4. Press the mixture into the bottom of the baking dish and bake for 10 minutes.
  5. Cool the crust slightly while preparing the filling.
  6. Beat the cream cheese until smooth, then gradually add 1/2 cup sugar, vanilla extract, and egg until well combined.
  7. Fold in chopped strawberries and cornstarch.
  8. Pour the cheesecake mixture over the crust.
  9. Bake for 25-30 minutes until set but slightly jiggly.
  10. Cool at room temperature before chilling in the fridge for at least 2 hours.
  11. Slice the bars and serve with extra strawberries or chocolate sauce.
