Ultimate Strawberry Crumble Cheesecake

A delicious fusion of creamy cheesecake, fresh strawberries, and a crunchy crumble topping that will tantalize your taste buds.

  • 2 cups crushed digestive biscuits
  • 6 tbsp melted unsalted butter
  • 2 tbsp granulated sugar
  • 24 oz full-fat cream cheese
  • 1 cup granulated sugar
  • 3 large eggs
  • 0.5 cup sour cream
  • 1 tbsp vanilla extract
  • 2 cups chopped strawberries
  • 0.5 cup granulated sugar (for macerating strawberries)
  • 1 tbsp lemon juice
  • 1 tbsp cornstarch mixed with 1 tbsp cold water
  • 1 cup all-purpose flour
  • 0.5 cup brown sugar
  • 6 tbsp cold unsalted butter (cubed)

Instructions

  1. Preheat your oven to 325°F (160°C).
  2. Combine the crushed digestive biscuits, melted butter, and 2 tablespoons of granulated sugar in a mixing bowl.
  3. Press the biscuit mixture into the bottom and slightly up the sides of a 9-inch springform pan.
  4. Bake the crust for about 10 minutes until it’s lightly browned.
  5. Beat the softened cream cheese and 1 cup of granulated sugar in a large bowl until smooth and fluffy.
  6. Add the eggs, one at a time, beating until just combined.
  7. Mix in the sour cream and vanilla extract until smooth and creamy.
  8. Combine the chopped strawberries, 0.5 cup of granulated sugar, lemon juice, and cornstarch mixture in another bowl.
  9. Layer half the cheesecake mixture into the crust, then distribute the strawberry mixture, and pour the remaining cheesecake mixture on top.
  10. Bake the cheesecake for about 50 to 60 minutes or until the edges are set but the center is slightly jiggly.
  11. Mix the flour, brown sugar, and cold butter to make the crumble topping.
  12. Sprinkle the crumble mixture on top of the cheesecake and bake for another 15–20 minutes until golden brown.
  13. Cool the cheesecake at room temperature, then refrigerate for at least 4 hours.
  14. Serve and enjoy!

Notes

For presentation, serve with a dollop of whipped cream and fresh berry slices.
