The Best Mushroom Rice

A flavor-packed, creamy mushroom rice perfect as a side dish or main course.

  • 1 cup rice
  • 2 cups vegetable or chicken broth
  • 1 cup mushrooms (sliced)
  • 1 onion (chopped)
  • 2 cloves garlic (minced)
  • 2 tablespoons olive oil
  • Salt and pepper to taste
  • Fresh parsley (for garnish)

Instructions

  1. Prepare your ingredients by rinsing the rice, chopping the onion, mincing the garlic, and slicing the mushrooms.
  2. Sauté the chopped onion in olive oil over medium heat for 3-4 minutes until translucent. Add minced garlic and sauté for 1 minute.
  3. Add the sliced mushrooms and cook for about 5-6 minutes until they release their juices.
  4. Stir in the rinsed rice and toast for 1-2 minutes.
  5. Pour in the broth, season with salt and pepper, and stir well. Bring to a boil, then reduce heat and cover.
  6. Cook for 15-20 minutes until the rice absorbs the broth and is tender.
  7. Fluff the rice with a fork and stir in fresh parsley before serving.

Notes

Serve warm and garnish with fresh parsley. Great as a side or main dish.
