Ultimate Biscoff Stuffed Cookies

Delicious cookies stuffed with gooey Biscoff cookie butter, combining a rich flavor with a chewy texture.

  • 1 cup salted butter (room temperature)
  • 1 cup light brown sugar (packed)
  • ½ cup granulated sugar
  • 2128 ounces cookie butter (1 ½2 jars, divided)
  • 1 teaspoon vanilla extract
  • 2 large eggs (at room temperature)
  • 3 cups all-purpose flour
  • 1 teaspoon baking soda
  • ½ teaspoon baking powder
  • ½ teaspoon kosher salt
  • Flaky sea salt for topping

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Cream the butter and sugars together until light and fluffy.
  3. Add the eggs and vanilla, mixing until fully combined.
  4. Combine the dry ingredients in a separate bowl and gradually mix into the wet ingredients.
  5. Fold in 1 ½ jars of cookie butter into the dough.
  6. Scoop the dough onto a lined baking sheet, leaving space between scoops.
  7. Top with flaky sea salt before baking for a gourmet finish.
  8. Bake for 10-12 minutes or until edges are lightly golden.
  9. Cool on a wire rack for a few minutes before transferring.

Notes

Chill the dough if it’s too warm to avoid excessive spreading. These cookies are perfect with ice cream or a glass of milk!
