Homemade Blue Moon Ice Cream

  • 1 ½ cups heavy whipping cream
  • ½ cup sugar
  • 3 teaspoons vanilla pudding mix
  • 1 teaspoon vanilla extract
  • 1 teaspoon raspberry extract or 1 cup raspberries
  • 1 teaspoon lemon extract
  • ¼ teaspoon salt
  • ½ teaspoon blue food coloring

Instructions

  1. Combine the Dairy: In a large mixing bowl, whisk together the whole milk and heavy whipping cream until fully blended.
  2. Add the Flavors: Whisk in the sugar, vanilla pudding mix, vanilla extract, raspberry extract (if using), lemon extract, and salt until all are well incorporated.
  3. Introduce the Color: Stir in blue food coloring one drop at a time until desired color is achieved.
  4. Chill the Mixture: Cover the bowl with plastic wrap and refrigerate for at least 30 minutes.
  5. Churn the Ice Cream: Pour the chilled mixture into an ice cream maker or freeze and stir every 30 minutes for 2-3 hours.
