Refreshing Cantaloupe Soup

A delightful chilled cantaloupe soup, perfect for summer gatherings, combining the sweet, juicy flavors of cantaloupe with creamy coconut milk and a hint of lime.

  • 1 ripe cantaloupe
  • 1 cup coconut milk
  • 2 tablespoons lime juice
  • 1 tablespoon honey (optional)
  • Salt to taste
  • Fresh mint leaves for garnish

Instructions

  1. Prep your cantaloupe: Cut cantaloupe in half and scoop out seeds. Scoop out flesh and place in a blender.
  2. Blend in the coconut milk until smooth.
  3. Add lime juice and honey, blend again to combine.
  4. Season with salt and blend once more, tasting for sweetness.
  5. Chill the soup in the refrigerator for about an hour.
  6. Serve chilled, garnished with mint leaves and a drizzle of coconut milk.
