Cheesecake Stuffed Strawberries

Delicious strawberries filled with a creamy cheesecake filling, perfect for summer gatherings.

  • 1 pint strawberries
  • 8 oz cream cheese, softened
  • 1/4 cup powdered sugar or low-carb sweetener
  • 1 tsp vanilla extract
  • 1/2 cup whipped cream
  • Fresh blueberries and raspberries for topping

Instructions

  1. Prepare the strawberries: Rinse the strawberries under cold water, pat them dry, cut off the tops, and scoop out a small cone shape from the bottom.
  2. Make the cheesecake filling: Combine cream cheese, powdered sugar, and vanilla extract, mix until smooth, then fold in whipped cream.
  3. Pipe the filling into strawberries using a piping bag.
  4. Top each filled strawberry with fresh blueberries or raspberries.
  5. Chill in the fridge for about 30 minutes before serving.

Notes

These can be made ahead of time. Store in the fridge covered until ready to serve.
