Cheesy Garlic Parmesan Spaghetti

A comforting twist on classic spaghetti, coated in a garlicky, cheesy sauce that hugs every bite.

  • 8 oz spaghetti
  • 4 cloves fresh garlic, minced
  • ½ cup grated Parmesan cheese (plus extra for topping)
  • 1 cup shredded mozzarella cheese
  • 2 tbsp unsalted butter
  • 2 tbsp olive oil
  • Salt and pepper, to taste
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Boil the pasta: Fill a large pot with water, add salt, and bring to a boil. Add spaghetti and cook for 8-10 minutes, reserving ½ cup pasta water.
  2. Sauté the garlic: In a skillet, heat olive oil and butter over medium heat. Add minced garlic and sauté for 1-2 minutes.
  3. Combine the cheeses: Lower the heat, add reserved pasta water, followed by Parmesan and mozzarella. Stir until melted into a creamy sauce.
  4. Marry the pasta and sauce: Toss the drained spaghetti into the skillet, mixing well to coat. Let sit on the heat for a minute for crispy edges.
  5. Season and serve: Season with salt and pepper and toss in parsley. Plate and add more Parmesan on top to serve.

Notes

For extra brightness, add a squeeze of fresh lemon juice before serving.
