Cherry Cobbler Muffins

Delicious Cherry Cobbler Muffins that blend sweet and tart flavors, perfect for breakfast, brunch, or dessert.

  • 1/2 cup sugar
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/2 cup milk
  • 1/4 cup melted butter
  • 1 egg
  • 1 cup fresh or canned cherries, pitted
  • 1 teaspoon vanilla extract
  • 1 tablespoon brown sugar (for topping)

Instructions

  1. Preheat the oven to 350°F (175°C) and line a muffin tin with paper liners, or grease it lightly.
  2. Mix the dry ingredients: In a medium bowl, whisk together the flour, sugar, baking powder, baking soda, and salt until well combined.
  3. Combine the wet ingredients: In another bowl, mix together the milk, melted butter, egg, and vanilla extract until fully blended.
  4. Create the batter: Pour the wet mixture into the dry ingredients, stirring gently until just combined.
  5. Fold in the cherries: Gently fold in your pitted cherries.
  6. Scoop each muffin cup about 3/4 full and sprinkle brown sugar on top.
  7. Bake for 20-25 minutes or until golden brown and a toothpick comes out clean.
  8. Cool in the pan for 5 minutes, then transfer to a wire rack.

Notes

Serve warm with whipped cream or vanilla ice cream. Try different fruit combinations for variety.
