Cherry Crumb Bars

Delightful Cherry Crumb Bars that evoke the sweetness of summer gatherings, combining fresh cherries with a buttery crumb topping.

  • 2 cups pitted cherries
  • 1 tablespoon granulated sugar
  • 2 tablespoons cornstarch (16 grams)
  • 1 tablespoon lemon juice
  • 3/4 cup unsalted butter (168 grams)
  • 1 3/4 cups all-purpose flour (219 grams)
  • 2/3 cup granulated sugar (133 grams)
  • 3 tablespoons cornstarch (24 grams)
  • 1/4 teaspoon salt
  • 1 tablespoon brown sugar

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Prep the cherry filling by combining pitted cherries, 1 tablespoon of granulated sugar, 2 tablespoons of cornstarch, and lemon juice in a mixing bowl.
  3. Make the crumb mixture by mixing melted butter, flour, 2/3 cup of granulated sugar, 3 tablespoons of cornstarch, salt, and brown sugar in a large bowl until it resembles coarse crumbs.
  4. Assemble the bars by greasing a 9×9-inch baking pan and pressing 2/3 of the crumb mixture into the bottom, then layering the cherry filling on top, and sprinkling the remaining crumb mixture over the cherries.
  5. Bake for about 35-40 minutes until the topping is golden brown and the filling is bubbly.
  6. Cool completely in the pan on a wire rack, then cut into squares.

Notes

Dust with powdered sugar before serving. Pair with vanilla ice cream or whipped cream for extra delight.
