Chewy Brown Butter Cookies with Saltine Cracker Toffee

  • 1 cup packed brown sugar
  • 2 large eggs

  • 3 cups all-purpose flour
  • 1 teaspoon baking soda

  • 1 cup homemade saltine cracker toffee

Instructions

  1. Brown the butter by placing it in a saucepan over medium heat until golden brown and nutty, about 5-7 minutes.
  2. Mix the granulated sugar and packed brown sugar in a mixing bowl, then add the warm brown butter and cream together until fluffy.
  3. Add the two large eggs and vanilla extract, mixing until fully combined.
  4. Incorporate the all-purpose flour, baking soda, and salt in another bowl, then gradually mix it into the wet ingredients until just combined.
  5. Add the homemade saltine cracker toffee and gently fold it into the cookie dough.
  6. Chill the dough for at least 30 minutes (up to 24 hours) to enhance flavor and prevent spreading.
  7. Preheat the oven to 350°F (175°C) and scoop tablespoon-sized portions onto a parchment-lined baking sheet.
  8. Bake for 10-12 minutes until the edges are golden and centers are still soft.
  9. Cool on the baking sheet for 5 minutes before transferring to a wire rack to set.
