Citrus Feta Salad with Orange Segments, Pistachios & Mint

A vibrant and refreshing salad featuring zesty orange segments, creamy feta cheese, crunchy pistachios, and aromatic mint.

Ingredients

  • 2 large oranges
  • 1 cup baby spinach or arugula
  • 1/2 cup crumbled feta cheese
  • 1/4 cup shelled pistachios, roughly chopped
  • 2 tbsp fresh mint leaves, thinly sliced
  • 1 tbsp extra-virgin olive oil
  • 1 tsp honey
  • 1/2 tsp Dijon mustard
  • 1 tsp lemon juice
  • Salt and freshly cracked black pepper, to taste

Instructions

  1. Segment the oranges: Cut off the top and bottom of the oranges and slice away the peel. Cut between the membranes to release the segments.
  2. Prepare the greens: Rinse baby spinach or arugula and lay it in a large serving bowl.
  3. Make the dressing: In a small bowl, whisk together olive oil, honey, Dijon mustard, lemon juice, and a pinch of salt and pepper. Adjust to taste.
  4. Combine the components: Top the greens with orange segments, crumbled feta, chopped pistachios, and sliced mint.
  5. Drizzle and toss: Drizzle the dressing over the salad and toss gently to combine.
  6. Final seasoning: Taste and adjust salt and pepper as needed.

Notes

This salad is best enjoyed fresh. Keep the dressing separate if storing leftovers.
