Instructions

  1. Prep the Rice: Begin by cooking your jasmine or white rice according to package instructions.
  2. Chop the Veggies: While the rice is cooking, chop up your onion, garlic, ginger, and crunchy vegetables.
  3. Sauté the Aromatics: In a large skillet, heat about a tablespoon of oil over medium heat, then sauté the onions until translucent for about 3-5 minutes.
  4. Add Garlic and Ginger: Stir in the garlic and ginger, cooking for about 30 seconds until fragrant.
  5. Cook the Chicken: Cut chicken into bite-sized pieces, add to the skillet, season with salt, pepper, and curry powder, and cook for about 5-7 minutes until no pink remains.
  6. Pour in the Coconut Milk: Add the coconut milk and simmer for about 3-5 minutes.
