Coconut Cupcakes with Lime Buttercream Frosting

Delicious coconut cupcakes topped with a zesty lime buttercream frosting.

  • 1/2 cup shredded sweetened coconut
  • 1 cup all-purpose flour
  • 2 teaspoons baking powder
  • 1/4 teaspoon salt
  • 1/2 cup unsalted butter (room temperature)
  • 3/4 cup granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon coconut extract
  • 2/3 cup coconut milk (mixed very well)
  • 1/3 cup sweetened shredded coconut (for decorating, optional)
  • 3/4 cup unsalted butter (softened to room temperature, for frosting)
  • 1.5 tablespoons lime zest
  • 3.54.5 cups powdered sugar (sifted)
  • 2 tablespoons lime juice (freshly squeezed)
  • 1 tablespoon whipping cream (if needed)
  • 23 drops green food coloring (optional)

Instructions

  1. Preheat your oven to 350°F (176°C) and line your cupcake pan with liners.
  2. In a bowl, whisk together the flour, baking powder, and salt.
  3. In a separate large mixing bowl, cream together the unsalted butter and granulated sugar until light and fluffy.
  4. Add the eggs one at a time, mixing well after each addition. Then, incorporate the vanilla and coconut extracts.
  5. Slowly mix in the coconut milk until well combined.
  6. Gradually add the dry ingredients into the wet mixture, folding gently until just combined.
  7. Gently fold in the shredded sweetened coconut.
  8. Divide the batter evenly into your cupcake liners and bake for about 18-22 minutes.
  9. Allow cupcakes to cool in the pan for about 5 minutes, then transfer to a wire rack to cool completely.
  10. While your cupcakes are cooling, prepare the frosting by beating the softened butter until creamy. Slowly add the powdered sugar, lime zest, and lime juice. Beat until well combined and fluffy.
  11. Once your cupcakes are completely cool, pipe or spread a generous dollop of your lime buttercream onto each cupcake.
  12. Top with sweetened shredded coconut, if desired.

Notes

Store cupcakes in an airtight container at room temperature for up to 3 days.
