Cozy Corn Chowder

A warm, creamy corn chowder perfect for every season that evokes sweet memories and brings people together.

Ingredients

  • Fresh or Frozen Corn (4 cups)
  • Potatoes (2 medium, diced)
  • Bacon (4 slices, chopped)
  • Heavy Cream (1 cup)
  • Onion (1 small, diced)
  • Garlic (2 cloves, minced)
  • Chicken or Vegetable Broth (4 cups)
  • Salt and Pepper (to taste)
  • Fresh Herbs (for garnish)

Instructions

  1. Cook the bacon in a large pot over medium heat until crispy (about 5-7 minutes). Transfer to a paper towel-lined plate.
  2. Sauté the diced onion and minced garlic in the bacon fat for 3-4 minutes until translucent.
  3. Add the diced potatoes and stir for 2 minutes, then pour in the broth and bring to a boil. Reduce to simmer and cook for 10-12 minutes until potatoes are fork-tender.
  4. Stir in the corn and heavy cream, and let simmer for 5-10 minutes. Add the crispy bacon back in.
  5. Season with salt and pepper to taste, then remove from heat and garnish with fresh herbs before serving.

Notes

This chowder can also be made in advance. It tastes even better the next day when you gently reheat it. Experiment with different herbs for unique flavors.
