Classic Corn Pone

A comforting Southern dish made with cornmeal, water, and a few pantry staples, perfect as an accompaniment to stews or enjoyed on its own.

  • 1 cup cornmeal
  • 1 cup water
  • 1 teaspoon salt
  • 1 teaspoon baking powder
  • 2 tablespoons vegetable oil

Instructions

  1. Mix the dry ingredients: In a mixing bowl, combine the cornmeal, salt, and baking powder. Stir until evenly blended.
  2. Add water: Gradually pour in the water, stirring as you go until you have a thick yet pourable batter.
  3. Heat the pan: Place a skillet over medium heat and add the vegetable oil. Heat for about 3-4 minutes.
  4. Cook the corn pone: Using a spoon, add dollops of the batter into the hot skillet, forming about 3-inch rounds.
  5. Flip and cook: Fry for about 4-5 minutes until golden brown, then flip and cook for another 3-5 minutes.
  6. Drain: Remove the corn pone from the skillet and place on paper towels to absorb excess oil.

Notes

Serve warm with butter and honey or alongside hearty stews. Experiment with flavors by adding cheese, herbs, or spices!
