Cowboy Salad

A vibrant and hearty Cowboy Salad packed with black and kidney beans, corn, juicy tomatoes, crispy peppers, and seasoned ground beef or turkey.

  • 1 can black beans, drained and rinsed
  • 1 can kidney beans, drained and rinsed
  • 1 cup corn, cooked or canned
  • 1 cup diced tomatoes
  • 1 cup diced bell peppers
  • 1/2 red onion, diced
  • 1 lb cooked ground beef or turkey (optional)
  • 1 cup diced avocado
  • 1/4 cup cilantro, chopped
  • 1/4 cup lime juice
  • 1 teaspoon cumin
  • Salt and pepper to taste

Instructions

  1. Prepare the base by adding the drained and rinsed black beans and kidney beans in a large mixing bowl. Toss gently to combine.
  2. Add the corn, folding it in to enhance the sweet flavor.
  3. Mix in the diced tomatoes, bell peppers, and red onion using a spatula.
  4. Incorporate the cooked ground beef or turkey, stirring it well into the salad.
  5. Go green with diced avocado and chopped cilantro; add these right before serving to prevent browning.
  6. Dress the salad with lime juice, cumin, salt, and pepper. Toss gently to coat.
  7. Taste the salad and adjust seasoning as desired.

Notes

Feel free to customize with spicy jalapeños or swap in quinoa for a grain boost.
