Sweet Potato Soup

A comforting and creamy sweet potato soup that warms the soul, perfect for chilly days.

  • 2 large Sweet Potatoes, peeled and cubed
  • 1 Onion, diced
  • 4 cups Vegetable or Chicken Broth
  • 1 teaspoon Cinnamon
  • 1 tablespoon Olive Oil
  • Salt and Pepper to taste
  • Coconut milk or heavy cream (optional for serving)

Instructions

  1. Prep your ingredients by peeling and chopping sweet potatoes into cubes and dicing the onion.
  2. Sauté the onion in olive oil over medium heat for about 5 minutes until translucent.
  3. Add the sweet potatoes, stirring together, and cook for 2-3 minutes.
  4. Pour in the broth, covering sweet potatoes by about an inch, bring to a boil, then simmer for 15-20 minutes until fork-tender.
  5. Season with cinnamon and stir to combine.
  6. Blend the soup until velvety smooth using an immersion blender or standard blender.
  7. Final touches include tasting and adjusting seasoning with salt and pepper, and optionally adding coconut milk or cream.
  8. Serve in bowls, garnished with olive oil, cream, or roasted pumpkin seeds.

Notes

For added flavor, consider spices like cayenne or fresh herbs like thyme. This soup can be made ahead of time and tends to taste better the next day.
