Cozy Autumn Wild Rice Soup

A creamy wild rice soup bursting with seasonal flavors that comfort every soul during fall.

Ingredients

  • 1 cup Wild Rice
  • 8 cups Chicken or Vegetable Broth
  • 2 tablespoons Olive Oil or Butter
  • 1 chopped Onion
  • 2 sliced Carrots
  • 2 diced Celery stalks
  • 3 minced Garlic cloves
  • 1 cup sliced Mushrooms
  • 1 cup Heavy Cream
  • 23 sprigs Fresh Thyme
  • 2 Bay Leaves
  • Salt
  • Pepper

Instructions

  1. Rinse the Wild Rice under cold water in a fine-mesh strainer.
  2. Sauté the Aromatics in a large pot with olive oil or butter until tender.
  3. Add the Garlic and Mushrooms, and sauté for another 5 minutes.
  4. Incorporate the rinsed Wild Rice, broth, and Bay Leaves. Bring to a boil, then simmer for 45-50 minutes.
  5. Season the soup with cream, thyme, salt, and pepper, and let it simmer for an additional 10 minutes.
  6. Serve hot, garnished with fresh parsley and Parmesan cheese.

Notes

This soup freezes well for up to 3 months. Use coconut milk for a dairy-free version.
