Creamy Broccoli Potato Soup

A comforting and creamy blend of broccoli and potatoes, perfect for chilly evenings.

Ingredients

  • 4 cups Broccoli, chopped
  • 2 large Potatoes, cubed (Yukon Gold or Russet)
  • 1 cup Cheddar Cheese, shredded
  • 1 Onion, diced (sweet or red)
  • 2 cloves Garlic, minced
  • 4 cups Vegetable Broth
  • 1 cup Cream (heavy or coconut milk)
  • Salt & Pepper, to taste

Instructions

  1. Prep your ingredients: Wash and chop the broccoli, peel and cube the potatoes, dice the onion, and mince the garlic.
  2. Sauté the aromatics: Heat olive oil in a large pot, add onions, cook for 3-4 minutes, add garlic and cook for 1-2 minutes.
  3. Add potatoes and broccoli into the pot and stir well.
  4. Pour in the vegetable broth to cover the vegetables and bring to a boil, then simmer for about 15 minutes.
  5. Blend the soup until smooth, either with an immersion blender or in batches in a countertop blender.
  6. Add cream and cheese, stir until melted, and adjust seasoning as needed.
  7. Let the soup simmer for another 5 minutes before serving.

Notes

For a thinner consistency, stir in additional broth. This soup can be easily frozen for later enjoyment.
