Instructions

  1. Prep your veggies: Start by chopping the broccoli into bite-sized florets and dicing the potatoes, onion, and garlic.
  2. Sauté the aromatics: In a large pot over medium heat, add a drizzle of olive oil. Once hot, throw in your diced onion and sauté for about 5 minutes until translucent.
  3. Add the potatoes and broccoli: Toss the diced potatoes and broccoli florets into the pot and stir for 2-3 minutes.
