Creamy Butternut Squash Butter Chicken

A warm and comforting dish that combines the rich flavors of traditional butter chicken with creamy butternut squash puree, perfect for chilly evenings.

  • 2 tablespoons vegetable oil
  • 1 medium onion, finely chopped
  • 1 tablespoon minced garlic
  • 1 tablespoon grated fresh ginger
  • 1 cup butternut squash puree
  • 1 can full-fat coconut milk
  • ½ cup tomato puree
  • 2 teaspoons garam masala
  • 1 teaspoon turmeric
  • 1 teaspoon cumin
  • 1 teaspoon coriander
  • ½ teaspoon chili powder
  • Salt and pepper, to taste
  • ¼ cup fresh cilantro, chopped finely (for garnish)
  • Basmati rice or naan

Instructions

  1. Prep the chicken: Start by cutting the chicken thighs into bite-sized pieces. Season with salt and pepper and let it sit while you prepare the ingredients.
  2. Sauté the aromatics: Heat the vegetable oil in a large skillet over medium heat. Add the chopped onions and sauté until translucent and soft, about 5 minutes. Add the minced garlic and grated ginger, cooking for an additional minute until fragrant.
  3. Brown the chicken: Increase the heat to medium-high. Add the chicken to the pan and cook until browned on the outside, about 5–7 minutes.
  4. Build the sauce: Stir in the butternut squash puree and tomato puree, then slowly add the coconut milk, whisking to combine.
  5. Add the spices: Sprinkle in the garam masala, turmeric, cumin, coriander, and chili powder. Stir to ensure everything is well incorporated.
  6. Simmer: Reduce the heat to medium-low, cover, and let it simmer for about 15-20 minutes.
  7. Finishing touch: Remove from heat and stir in a bit more coconut milk if desired. Sprinkle with fresh cilantro before serving.
  8. Serve and enjoy: Ladle the butter chicken over basmati rice or alongside warm naan.

Notes

For a spicier version, increase the chili powder or add diced jalapeños. This dish can be made in advance and tastes even better after the flavors meld.
