Cajun Potato Soup

A warm and creamy Cajun Potato Soup filled with bold flavors and hearty ingredients, perfect for cozy gatherings.

  • 1 pound andouille sausage, sliced
  • 4 large potatoes, diced
  • 1 cup celery, chopped
  • 1 cup bell peppers, chopped
  • 1 cup onions, chopped
  • 4 cups chicken broth
  • 1 tablespoon Cajun seasoning
  • 1 cup heavy cream
  • 1 cup cheddar cheese, shredded
  • Salt and pepper to taste

Instructions

  1. Sauté the vegetables: In a large pot, heat a splash of oil over medium heat. Toss in the sliced andouille sausage first and cook until browned, about 5-7 minutes. Remove the sausage and set aside, leaving drippings in the pot. Add the chopped onions, celery, and bell peppers. Sauté for about 5 minutes, or until tender.
  2. Add potatoes and broth: Once veggies are soft, add the diced potatoes and stir. Pour in the chicken broth along with the Cajun seasoning. Bring to a gentle boil.
  3. Simmer until tender: Reduce heat and let it simmer for 15-20 minutes until the potatoes are fork-tender.
  4. Add cream and cheese: Stir in the heavy cream and let it warm for another 5 minutes. Add the shredded cheddar and stir until melted.
  5. Season and serve: Taste the soup and season with salt and pepper. Ladle into bowls and sprinkle with additional cheese.

Notes

Pairs well with crusty bread or a fresh salad. For extra spice, add jalapeños. Store leftovers in the fridge for up to 3-4 days.
