Creamy Carrot Ginger Soup

A cozy and nourishing carrot ginger soup that warms the soul and delights the taste buds.

Ingredients

  • 4 cups Carrots, peeled and chopped
  • 2 tablespoons Fresh Ginger, minced
  • 1 medium Onion, sliced
  • 2 cloves Garlic, minced
  • 4 cups Vegetable or Chicken Broth
  • 1 cup Heavy Cream
  • 1 tablespoon Olive Oil
  • Salt, to taste
  • Pepper, to taste

Instructions

  1. Prep your veggies: Peel and chop the carrots into 1-inch chunks. Slice the onion and mince the garlic and ginger.
  2. Sauté the aromatics: In a large pot, heat olive oil over medium heat. Add onion and sauté for 5 minutes until translucent. Add garlic and ginger, sauté for another 2-3 minutes until fragrant.
  3. Add carrots and broth: Stir in the chopped carrots, then pour in the broth. Bring to a gentle boil.
  4. Simmer: Reduce heat to low, cover, and simmer for 20-25 minutes until the carrots are tender.
  5. Blend: Use an immersion blender to puree the soup until smooth. Alternatively, transfer to a countertop blender in batches.
  6. Stir in the cream: Return the soup to heat and stir in heavy cream. Adjust seasoning with salt and pepper.
  7. Serve: Ladle into bowls and garnish with a swirl of cream or fresh herbs.

Notes

This soup can be made ahead of time and reheated. For a vegan option, substitute cream with coconut milk.
