  • 1 medium onion
  • 4 cloves garlic
  • 1 cup heavy cream
  • 4 cups vegetable or chicken stock
  • Salt and pepper to taste

Instructions

  1. Prep the ingredients: wash the cauliflower and cut into florets, chop the onion, and mince the garlic.
  2. Roast the cauliflower: Preheat the oven to 425°F (220°C). Spread the florets on a baking sheet, drizzle with olive oil, and sprinkle with salt and pepper. Roast for 25-30 minutes.
  3. Sauté the aromatics: In a large pot, add olive oil and sauté the onion until translucent, about 5-7 minutes.
  4. Add the garlic and sauté for an additional minute until fragrant.
  5. Combine the roasted cauliflower and stock in the pot. Bring to a simmer and let flavors mingle for 10-15 minutes.
  6. Blend the soup until creamy using an immersion blender or in batches with a standard blender.
  7. Add the heavy cream, stir to combine, and let it simmer for 5 minutes.
  8. Taste before serving and adjust seasoning.
