Cheeseburger Soup

A rich, creamy cheeseburger soup with tender potatoes, zesty carrots, and seasoned beef, topped with cheddar cheese.

Ingredients

  • 1 lb lean Ground Beef
  • 2 medium Potatoes, peeled and diced
  • 1 cup Carrots, chopped
  • 1 cup Cheddar Cheese, shredded
  • 1 cup Milk (whole or unsweetened alternative)
  • 4 cups Beef or Vegetable Broth
  • 1 medium Onion, chopped
  • 23 cloves Garlic, minced
  • Salt and Pepper to taste
  • Optional: Smoked Paprika, Jalapeños, Crumbled Bacon, Fresh Herbs

Instructions

  1. Brown the Beef: Heat a large pot over medium-high heat. Add ground beef, sprinkle with salt and pepper, and cook until browned, about 5-7 minutes.
  2. Sauté the Veggies: Drain excess fat, add onions, garlic, carrots, and potatoes. Cook for about 5 minutes until softened.
  3. Make the Stock: Stir in broth, bring to a simmer, and cook for about 15 minutes until veggies are tender.
  4. Add the Creaminess: Lower heat, stir in milk and cheddar cheese until melted and creamy.
  5. Season to Taste: Adjust seasoning as needed with salt, pepper, or hot sauce.

Notes

Serve topped with extra cheese and chives, alongside crusty bread. Soup can be prepared ahead of time and stored in the fridge for up to 3 days.
