Chicken Corn Chowder

A creamy, hearty Chicken Corn Chowder that warms your soul and tantalizes your taste buds—a perfect hug in a bowl.

  • 1 lb Chicken Breasts (or Thighs)
  • 2 cups Fresh Corn
  • 2 cups Potatoes, peeled and diced
  • 1 cup Heavy Cream
  • 3 tablespoons Butter
  • 1 Onion, finely chopped
  • 2 cloves Garlic, minced
  • 4 cups Chicken Broth
  • Fresh Herbs (Thyme or Parsley)
  • Salt and Pepper, to taste

Instructions

  1. Cook the Chicken: Begin by finely dicing your chicken into bite-sized pieces. In a large pot, melt 2 tablespoons of butter over medium heat. Season the chicken with salt and pepper, and cook for about 5–7 minutes until no longer pink. Remove the chicken and set aside.
  2. Sauté the Aromatics: In the same pot, add another tablespoon of butter. Toss in a finely chopped onion and sauté until translucent, about 3–4 minutes. Then, add minced garlic and cook for an additional minute until fragrant.
  3. Prepare the Potatoes: Peel and dice your potatoes into small cubes. Add these to the pot, followed by the chicken broth. Bring it to a boil and let it simmer for about 15 minutes, until tender.
  4. Incorporate the Corn: Add the corn and pre-cooked chicken to the pot. Let everything come together for an additional 5–7 minutes.
  5. Pour in the Cream: Reduce heat to low and stir in the heavy cream until blended. Add fresh herbs for an herbaceous boost and adjust seasoning.
  6. Serve: Ladle the chowder into bowls and garnish with fresh herbs.

Notes

Serve with crusty bread or biscuits. For a gourmet touch, consider adding a drizzle of chili oil or a swirl of crème fraîche.
