  • 1 cup wild rice, uncooked
  • 2 medium-sized carrots, diced
  • 2 stalks celery, diced
  • 1 medium onion, diced
  • 3 cloves garlic, minced
  • 6 cups low-sodium chicken broth
  • 1 cup heavy cream
  • 1 teaspoon dried or fresh thyme
  • Salt and pepper, to taste

Instructions

  1. Prep your ingredients: Start by gathering all your ingredients. Dice your chicken, prepare the vegetables, and measure your rice.
  2. Sauté vegetables: In a large pot, add a tablespoon of olive oil over medium heat. Toss in the diced onion, carrots, and celery.
  3. Add garlic and herbs: Once the veggies are ready, stir in the minced garlic and thyme, and cook for an additional minute.
  4. Incorporate chicken and broth: Add the shredded chicken, followed by the chicken broth. Bring it to a gentle simmer before tossing in the wild rice.
  5. Simmer away: Cover the pot and let everything simmer for about 40-45 minutes, or until the wild rice is tender.
  6. Stir in heavy cream: Once the rice is perfectly cooked, lower the heat and slowly stir in the heavy cream.
  7. Taste and adjust: Give the soup a good stir and taste. Add more seasoning if needed.

Notes
