Homemade Chocolate Custard Ice Cream

  • 1 cup whole milk
  • 1/2 cup granulated sugar
  • 4 large egg yolks
  • 1/4 teaspoon salt
  • 1 teaspoon vanilla extract
  • 4 ounces semisweet chocolate, finely chopped

Instructions

  1. Prep your ingredients: Before you start, make sure you have all your ingredients measured out and ready.
  2. Heat the dairy: In a medium saucepan, combine the heavy cream, whole milk, and half of the granulated sugar (¼ cup). Gently heat the mixture over medium heat.
  3. Whisk the egg yolks: In a separate bowl, whisk together the egg yolks, remaining sugar, and the salt until pale and slightly thickened.
  4. Temper the yolks: Once the dairy mixture is hot, ladle a bit of it into the egg yolk mixture while whisking constantly.
  5. Combine and heat again: Pour the tempered egg yolk mixture back into the saucepan and cook over medium-low heat, stirring gently until thickened.
  6. Melt the chocolate: Remove from heat and add the finely chopped semisweet chocolate and vanilla extract. Stir until smooth.
  7. Chill the mixture: Let come to room temperature, then refrigerate for at least 4 hours or overnight.
  8. Ice cream maker time: Pour the chilled mixture into your ice cream maker and churn according to the manufacturer’s instructions.
  9. Freeze to firm up: Transfer churned ice cream into an airtight container and freeze for a few hours.
