Creamy Garlic Sauce Baby Potatoes

  • 1.5 lbs baby potatoes, halved or quartered
  • 4 tbsp unsalted butter
  • 4 cloves garlic, minced
  • 1 cup heavy cream
  • 1/4 cup grated Parmesan cheese
  • Salt and pepper to taste
  • 2 tbsp fresh parsley, chopped

Instructions

  1. Start by washing your baby potatoes thoroughly and cutting them in half or quarters.
  2. Add the potatoes to a pot of salted water and bring it to a boil. Cook until fork-tender, about 10-15 minutes. Drain and set aside.
  3. Melt the butter in a large skillet over medium heat.
  4. Add the minced garlic and sauté for about 1-2 minutes until fragrant.
  5. Pour in the heavy cream slowly while stirring and let it simmer until it starts to bubble gently.
  6. Stir in the grated Parmesan cheese until melted and smooth, then season with salt and pepper.
  7. Toss the cooked potatoes into the creamy garlic sauce to coat.
  8. Simmer for an additional 2-3 minutes, then sprinkle with fresh parsley before serving.
