Creamy Jalapeño Popper Soup

A comforting and creamy soup inspired by the classic flavors of jalapeño poppers, combining spicy jalapeños, crispy bacon, and smooth cream cheese.

  • 2 chicken breasts, boneless and skinless
  • 45 jalapeños, roughly chopped
  • 8 oz cream cheese
  • 4 slices of bacon
  • 1 onion, chopped
  • 3 cloves of garlic, minced
  • 4 cups chicken broth
  • 1 cup corn (optional)
  • 1 tablespoon olive oil
  • Salt & pepper, to taste

Instructions

  1. Prep your ingredients: Start by chopping your onion, mincing the garlic, and dicing the jalapeños. Cut the chicken into bite-sized pieces.
  2. Cook the bacon: In a large pot, heat olive oil over medium heat. Add the bacon and cook until crispy, about 5-7 minutes. Transfer to a paper towel-lined plate.
  3. Sauté the aromatics: In the same pot, add onions and cook until translucent, about 3-4 minutes. Add garlic and jalapeños, cooking until fragrant.
  4. Add the chicken: Toss in chicken pieces, seasoning with salt and pepper. Cook until browned, about 5 minutes.
  5. Pour in the broth: Add chicken broth and corn to the pot. Bring to a boil, then reduce to a simmer for 15-20 minutes.
  6. Stir in the cream cheese: Mix until melted and combined. Adjust consistency with extra broth if needed.
  7. Finish it up: Taste and adjust seasoning. Optionally blend part of the soup for creaminess.
  8. Serve it up: Ladle into bowls, topping with crispy bacon and fresh cilantro or green onions.

Notes

For a vegetarian version, use chickpeas and vegetable broth. Feel free to add spices like smoked paprika for extra flavor.
