Creamy Mushroom Soup

A cozy and comforting creamy mushroom soup that embraces you with rich flavors and silky texture, perfect for chilly evenings.

Ingredients

  • 8 ounces fresh mushrooms (cremini and shiitake recommended)
  • 1 medium onion (sweet onions preferred)
  • 2 teaspoons fresh thyme
  • 1 cup heavy cream
  • 4 cups vegetable or chicken broth
  • 2 tablespoons olive oil
  • Salt and pepper to taste

Instructions

  1. Sauté the onions in olive oil until soft and translucent, about 5 minutes.
  2. Add the sliced mushrooms and cook for 8-10 minutes until golden brown.
  3. Sprinkle in fresh thyme and cook for another minute.
  4. Pour in the broth, scraping up any bits from the pot, and let it simmer for 10-15 minutes.
  5. Blend the soup until smooth using an immersion blender or in batches in a blender.
  6. Add the heavy cream and heat through on low, seasoning with salt and pepper as needed.
  7. Serve in bowls with fresh thyme and a drizzle of olive oil if desired.

Notes

You can add red pepper flakes for some heat or a mix of different mushrooms for varying flavors.
