  • 1 cup cottage cheese
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 4 cups vegetable broth
  • 1 tablespoon olive oil
  • Salt and pepper to taste

Instructions

  1. Prep the ingredients by washing and slicing your mushrooms, chopping the onion, and mincing the garlic.
  2. Sauté the onions in a large pot with olive oil over medium heat for about 3-4 minutes.
  3. Add the minced garlic and stir for an additional minute.
  4. Cook the sliced mushrooms for about 5-7 minutes, stirring occasionally.
  5. Pour in the vegetable broth and season with salt and pepper, bringing it to a gentle boil.
  6. Blend the soup until smooth using an immersion blender or regular blender.
  7. Incorporate the cottage cheese into the warm soup until fully integrated.
  8. Taste and adjust the seasoning as needed.
  9. Let the soup simmer for another 5-10 minutes to meld the flavors.

Notes

This soup can be prepared in advance and keeps well for up to 3 days in the fridge or can be frozen for up to a month.
