  • 1 pound Chicken (boneless, skinless breast or thighs)
  • 1 cup Wild Rice
  • 2 Carrots (diced)
  • 2 Celery stalks (diced)
  • 1 Onion (diced)
  • 2 cloves Garlic (minced)
  • 6 cups Chicken broth (low-sodium)
  • 1 cup Heavy cream
  • 2 Bay leaves
  • 1 teaspoon Thyme (dried or fresh)
  • Salt and pepper to taste
  • 1 tablespoon Olive oil

Instructions

  1. Prepare the ingredients by dicing your chicken, carrots, celery, and onion.
  2. Sauté the veggies in a large pot with olive oil until fragrant.
  3. Brown the chicken, seasoning with salt and pepper.
  4. Introduce the diced carrots and celery to the pot, cooking for a couple of minutes.
  5. Add the wild rice, chicken broth, bay leaves, and thyme, then bring to a simmer.
  6. Stir in the cream once the rice is tender, adjusting seasoning as needed.
  7. Serve it up in bowls, garnishing if desired.

Notes

Adjust the thickness of the soup with extra broth or water if needed. This soup tastes even better the next day, making it great for meal prep.
