Creamy Roasted Apple Pumpkin Soup

A cozy autumn soup combining the earthy sweetness of pumpkin with tart apples for a delightful meal.

  • 2 apples, peeled and diced
  • 1 can pumpkin puree (15 oz)
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 teaspoon cinnamon
  • 1/2 teaspoon nutmeg
  • 1/2 teaspoon allspice
  • 2 cups vegetable broth
  • 1 cup heavy cream
  • 1 teaspoon smoked paprika
  • Salt and pepper, to taste
  • Fresh parsley or herbs for garnish
  • Freshly grated Parmesan cheese (optional)

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Prepare the apples, onion, and garlic.
  3. Roast apples and onion on a baking sheet with olive oil, salt, and pepper.
  4. Roast until golden, about 20-25 minutes.
  5. Sauté minced garlic in a pot over medium heat.
  6. Combine roasted apples and onions with sautéed garlic.
  7. Add pumpkin puree and spices; mix well.
  8. Pour in vegetable broth and bring to a simmer for 10 minutes.
  9. Blend until creamy using an immersion blender.
  10. Stir in heavy cream and adjust seasoning.
  11. Serve warm, garnished with fresh herbs and Parmesan cheese.

Notes

This soup can be frozen for up to three months and reheats well. Adjust seasoning during cooking for best flavor.
