Creamy Salmon Pasta

A quick yet indulgent meal that combines tender salmon with luscious cream and fresh spinach, all tossed together with perfectly cooked pasta.

  • 2 fillets of salmon
  • 1 cup fresh spinach
  • 8 oz pasta (fettuccine or linguine)
  • 1 cup heavy cream
  • 2 tablespoons olive oil
  • 2 cloves garlic, minced
  • Salt and pepper to taste
  • Grated Parmesan cheese for serving

Instructions

  1. Cook the Pasta: Bring a large pot of salted water to a boil. Add your fettuccine or linguine, and cook until al dente (about 8-10 minutes). Reserve 1 cup of pasta water before draining.
  2. Sear the Salmon: In a large skillet, heat olive oil over medium heat. Season salmon with salt and pepper, and sear for 4-5 minutes per side until cooked through. Remove and let rest.
  3. Sauté the Garlic: In the same skillet, add minced garlic and sizzle for about 30 seconds until fragrant.
  4. Add the Cream: Pour in heavy cream while stirring. Bring to a simmer and adjust thickness with reserved pasta water if needed. Simmer for about 3-4 minutes.
  5. Mix in the Spinach: Add fresh spinach and let it wilt into the cream sauce for about 1 minute.
  6. Flake the Salmon: Flake the cooked salmon into large pieces and fold into the sauce with spinach.
  7. Combine Pasta and Sauce: Add the cooked pasta to the skillet and toss everything together. Adjust consistency with reserved pasta water as needed.
  8. Serve with Love: Plate the pasta, sprinkle with grated Parmesan cheese, and enjoy!

Notes

Add a squeeze of lemon juice or fresh herbs for extra flavor. Leftovers can be stored in an airtight container for up to 3 days.
