Creamy Tomato Tortellini Soup

A warm and comforting soup combining classic tomato flavors and tender tortellini, perfect for cozy evenings.

  • 1 package (9-12 ounces) Cheese Tortellini
  • 1 can (28 ounces) Canned San Marzano Tomatoes
  • ½ cup Heavy Cream
  • Fresh Basil
  • 23 cloves Garlic
  • 1 Onion
  • 4 cups Vegetable or Chicken Broth
  • 2 tablespoons Olive Oil

Instructions

  1. Sauté the Aromatics: In a large pot, heat about 2 tablespoons of olive oil over medium heat. Add one finely chopped onion and sauté until it’s translucent, about 5 minutes.
  2. Add the Garlic: Once the onions are soft, toss in 2-3 cloves of minced garlic. Sauté for an additional minute until fragrant.
  3. Melt in Those Tomatoes: Pour in a can (28 ounces) of crushed San Marzano tomatoes along with their juices. Stir together and let it simmer for about 10 minutes.
  4. Add the Broth: Pour in 4 cups of vegetable or chicken broth. Bring to a gentle boil, then reduce heat and let it simmer for another 10-15 minutes.
  5. Blend It Up (Optional): Use an immersion blender to purée the tomato mixture for a smoother soup, if desired.
  6. Stir in the Cream: Reduce heat to low and stir in ½ cup of heavy cream.
  7. Cook the Tortellini: Add the tortellini and cook according to package directions, usually around 2-4 minutes.
  8. Season to Taste: Season with salt and pepper.
  9. Finish with Fresh Basil: Stir in torn fresh basil leaves just before serving.

Notes

Top with freshly shaved Parmesan cheese and serve with a warm crusty baguette or simple side salad.
