Creamy Tomato Tortellini Soup

A comforting and rich bowl of creamy tomato tortellini soup perfect for busy weeknights.

  • 2 cups tortellini (cheese or spinach)
  • 1 can (28 oz) canned tomatoes (whole or crushed)
  • 1 cup heavy cream
  • 1/4 cup fresh basil, chopped
  • 2 cloves garlic, minced
  • 1 onion, diced
  • 4 cups vegetable or chicken broth
  • 1/2 cup Parmesan cheese, grated
  • 1 tablespoon olive oil

Instructions

  1. Sauté the aromatics: In a large pot, heat olive oil over medium heat. Add diced onion and minced garlic; sauté until translucent and fragrant (about 5 minutes).
  2. Add tomatoes: Pour in canned tomatoes and stir to combine. If using whole tomatoes, break them up as they cook. Simmer for about 10 minutes.
  3. Pour in the broth: Add vegetable or chicken broth and bring to a gentle boil.
  4. Stir in the tortellini: Toss in tortellini and simmer for 5-7 minutes, or until cooked.
  5. Add cream and basil: Lower the heat, slowly pour in heavy cream, stir in fresh basil, and season with salt and pepper.
  6. Serve it up: Ladle soup into bowls, garnishing with more basil and grated Parmesan.

Notes

Feel free to add veggies or protein for variation. Coconut milk can be used for a dairy-free alternative.
