Baked Feta Potatoes

A one-pan wonder that transforms humble potatoes into a delightful dish with creamy feta and aromatic garlic.

Ingredients

  • 2 large baking potatoes (russet or Idaho)
  • 200g block of feta cheese
  • 2 tbsp olive oil
  • 1 tsp dried thyme
  • 1 tsp dried oregano
  • 1 head of garlic (top cut off)
  • 1 lemon (quartered)
  • 1 tbsp honey
  • Fresh basil for garnish

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Prep the potatoes by scrubbing them and pricking with a fork.
  3. Roast the garlic by drizzling olive oil over it, wrapping it in foil, and placing it in the oven with the potatoes.
  4. Bake the potatoes for about 45-60 minutes, until fork-tender.
  5. Prepare the feta mixture in a baking dish with feta, olive oil, thyme, oregano, and lemon wedges.
  6. Add honey over the feta.
  7. Roast the feta for the last 15 minutes of the potatoes’ baking time.
  8. Check for doneness of the garlic and potatoes.
  9. Combine roasted garlic with the feta and lemon mixture until creamy.
  10. Serve the baked potatoes topped with the creamy feta mixture and fresh basil.

Notes

For variations, consider adding sun-dried tomatoes, crushed red pepper flakes, or avocado.
