Cheesy Red Potatoes

These buttery, cheesy red potatoes are the ultimate comfort food, perfect for cozy dinners or as a crowd-pleasing side dish.

  • 2 pounds red potatoes, quartered
  • 1 cup shredded cheese (cheddar or your preference)
  • 1/2 cup sour cream
  • 1/4 cup milk
  • 2 tablespoons butter
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • Salt and pepper to taste
  • Chopped chives or parsley for garnish

Instructions

  1. Prep your potatoes by washing them thoroughly under cold water and quartering them into bite-sized pieces.
  2. Boil the potatoes in a large pot of salted water for about 10-15 minutes, or until fork-tender.
  3. Drain the potatoes in a colander and return them to the pot while still hot.
  4. Butter the hot potatoes by adding butter and allowing it to melt, then sprinkle in garlic powder, onion powder, salt, and pepper.
  5. Stir in the sour cream and milk until the potatoes are well-coated.
  6. Add shredded cheese, stirring until melted and combined.
  7. Transfer to a baking dish and sprinkle reserved cheese on top.
  8. Bake at 350°F (175°C) for about 20-25 minutes until bubbly and golden.
  9. Garnish with chives or parsley before serving.

Notes

Add crispy bacon bits or jalapeños for variations. Can be made ahead and stored in the refrigerator.
