  • 2 eggs
  • 1/4 cup all-purpose flour
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • Vegetable oil for frying

Instructions

  1. Prep the potatoes by peeling and grating them, then squeeze out excess moisture using a cloth.
  2. Chop the onion and add it to the grated potatoes.
  3. Mix the potatoes, onion, eggs, flour, salt, and pepper in a large bowl.
  4. Heat vegetable oil in a skillet over medium-high heat, ensuring it’s hot enough to sizzle the mixture.
  5. Fry spoonfuls of the mixture in the skillet for 3-4 minutes on each side until golden brown.
  6. Drain the cooked pancakes on paper towels and repeat until all are cooked.
