Crispy Greek Potatoes

Delightful crispy Greek potatoes with a golden exterior and fluffy interior, perfect as a side dish or snack.

  • 46 Potatoes (Russet or Yukon Gold)
  • 1/4 cup Freshly Squeezed Lemon Juice
  • 1/4 cup Extra Virgin Olive Oil
  • 46 cloves Garlic, minced
  • 2 tablespoons Dried Oregano
  • 1 teaspoon Salt
  • 1/2 teaspoon Black Pepper
  • 1/2 cup Vegetable or Chicken Broth
  • Fresh Parsley or Oregano (for garnish)

Instructions

  1. Preheat your oven to 425°F (220°C).
  2. Wash and scrub the potatoes thoroughly.
  3. In a large mixing bowl, combine the lemon juice, olive oil, garlic, oregano, salt, and black pepper.
  4. Add the potato wedges to the bowl and toss them in the marinade until evenly coated.
  5. Line a baking sheet with parchment paper and spread the coated potatoes in a single layer.
  6. Drizzle the broth around the potatoes.
  7. Pop the baking sheet in the oven and roast for about 35-40 minutes.
  8. Once golden brown and crispy, sprinkle with fresh herbs before serving.

Notes
